Best Knife I’ve used!
I had a friend once tell me that a Japanese utility knife would change your life. I’ve always loved cooking but slicing veggies is my least favorite part!This knife is a dream! Light, comfy, and super sharp and super efficient at cutting pretty much everything. The knife came in a half opened package with a funny Japanese to English translation, (which is fine cause the knife was packaged with a blade sleeve.The knife was super shinny and sharp, but I bought a knife sharpener just to keep it super sharp so it slides through easily.The first thing I cut was a cucumber. The slicing was amazing and smooth. The blade and handle are both very sturdy and lightweight. The blade slides right through meat, veggies, and bags/plastic packaging so smoothly and easily.The thing cuts like a dream!As far as the build of the knife. It’s pretty close to a perfect size as far as utility knifes go. Although we have a knife block to compare to, it’s a pretty close to perfect size (7 inches or so). The tip is pretty sharp but safe enough it was catch or Jan a hole in your finger if you’re were to hit it the right way. Although I would play five finger fillet with it (rofl... a joke). Both the blade and handle are comfy and sturdy. I do worry about the block handle middle of knife part. It’s squared off at the bottoms of the blade and is kind of sharp so it could cause an issue if you hit a finger the wrong way.Over all, I’d say this knife is well worth the price (although a bit expensive for an ordinary knife). It’s sturdy, well made, and cuts smoothly like a dream. This thing has pretty much replaced any knife in my kitchen! Easy to clean and shinny. It seems like it would be pretty easy to upkeep and stay sharp. No complaints from me. If you buy it you will not at all regret it! I promise! Cheers!

great balance, sharp right out of the box, feels great in my hand. Just a shame I did not buy this earlier.

If you want to start with one knife for cooking, start here
I received this professional knife originally from my realtor as a thank you gift. I was married to a professional chef so I know how imperative good knives are for cooking. A good knife is the key to cooking. My son is now living on his own and has to cook for himself. This is the first knife I bought him. Wasting money on an inexpensive knife isn't worth it. This is lifetime investment. He can do almost everything with this one knife for now and it's extremely sharp, balanced in one's hand and can cut everything. I highly recommend this knife. High quality and one that can be passed down generation after generation.

Excellent knife at a reasonable price
Was very impressed with the Tojiro Gyutou I had purchased previously, but wanted a shorter knife to use for smaller items. Ordered this one and its a perfect length for cutting smaller items and vegetables. Good utility knife. *Very* sharp and holds an edge well. For the price, these knives can't be beat. Use the Kyocera ceramic honing rod and these knives will take on an extremely sharp edge. I prefer these to the more expensive Global knives I had previously. Could never get the edge of the Globals as sharp as these Tojiro knives. The edge seems to be more durable than the Globals, as two of the Globals I had, chipped at the tip and near the end. Will see over the long term, but so far extremely pleased with the Tojiro knives.

Very sharp
Love the knife overall I would give 5 stars but just as a warning it is a bit small in the hand. I wish the handle was a bit longer and thicker. Other than that it’s held an edge very well through many uses. My wife even threw it in the dishwasher 🤦🏻♂️

TOJIRO IS THE BEST!
I love the Tojiro DP line. I'm currently collecting all the knives. The 807 is a nice gyuto that is very balanced. It comes with the VG-10 steel thats similar to the Shun line. The downside is that apparently it chips easily, but I have not experienced any chips with my tojiro and I also know that certain knives shouldn't be used to hack at chicken bones and etc. This knife is very sharp out of the box and technically you can get it even sharper using a 800/3000 or 1000/6000 grit stone. The tip of the knife is very sharp too and is definitely a bang for your buck knife that feels like a 150$ knife sometimes. I personally feel it'll outperform most brand name expensive knives. Get this knife if you need a good all around chef's gyuto

Great Japanese knife
I bought this as a gift for someone who knows a great deal about using kitchen knives, yet not of a high quality. This is the 1st knife of its kind (japanese, pricey i.e.) that she is using, and is very happy about that. This is a grade up from mediocrity. It gives you an utterly different feel. It's light on touch and easy to use. The cutting happens almost without effort. I don't know about the maintanence yet, since it didn't have to be maintained or resharpened yet - time will show. So far so good. I do recommend it to those who want to have a better kitchen experience, while using a superior knife.

Honestly one of the best knives and a an unreal value
I wanted a chef's knife for long time. I just could not afford a $200+ knife. I read a review about chef's knives and this one was highly rated and the best value. This is a 7" blade and great for vegies and the cutting really thin slices.It came very quickly from Amazon and arrived with an extremely sharpened edge that was awesome. Goes through food and vegies so fast and smoothly. Makes cooking a lot easier.I will probably look into a slightly larger blade from Tojiro for cutting larger foods.
