Q: This might sound like a dumb question, but does the flavored , like the caramel cream have carbs in it ?

I admit I’ve never questioned that about any flavored coffee. I’ve had flavored tea with bits of fruits as nuts which certainly have carbs but I doubt flavored coffee does. To be sure, ask the company. Good luck.

My coffee always arrived fresh.

Q: Does each package contain the roast date? If so how recently were the beans roasted in relation to when you received them?

I cannot recall if the package is date stamped, however, since Schuils is a small, local toaster I am always confident that their beans are fresh. Their facility is 50 miles from where I live and we have shopped the store numerous times. They have wall to wall customers (prior to the COVID-19 break out) and their coffee is very much a local favorite and in high demand.
