Such a great product!
I love this product!We use a lot of Miso in our cooking so it’s brilliant to be able to make my own. I love experimenting with using different beans to make different types too!One pack of Koji makes a full large Kilner jar of miso, that when kept in smaller airtight jars lasts for ever. So much cheaper than buying already made miso and it’s British made!Great in sauces, dressings, soups and stocks.I’ve not experimented with using the Koji as a seasoning or drink yet but I’m definitely going to be trying out some new recipes. I’m vegetarian so it’s difficult to get the depth of flavour in foods that you get with meat. But adding a spoon of the miso brings another dimension to the flavours. It’s opened up a whole new style of cooking which is really exciting.Super yummy home made miso at a fraction of the price of shop brought and delivery was super quick!Thank you Umami Chef! Such a great product!

Wonderful health item
I use this item for gut health.Dry white rice kouji ,cooked white rice and some warm water in 60 degrees for 8 hours. Then drink or add it any meals.This is a good bacteria for gut.The measurements is it depends on quantity.

Use it well before the use by date! Updated!
1st reviewI’m very disappointed with this product, well actually not the product but the packaging!I bought this with the intention of making miso but didn’t get around to it straight away. There was plenty of time left on the use by date so I put it aside, but there was a problem. When I went to use it it turns out the packaging is braking down and the outer labeling is coming off, but worse still the seams of the inner bag have broken and come apart allowing air into the inner bag and a few grains of rice to fall out.The bag is a plant based compostable one and thanks to that I can’t use the contents because although stored in a cool dry place as instructed, it also says on the bag “refrigerate once open and use the contents within 3 days”. Clearly that didn’t happen as I didn’t know the bag had come apart at its seams, so I’m reviewing the bag not the contents which were disposed of unused.Pity, it wasn’t cheap and I was looking forward to making home made miso.2nd Review…..It’s only the 200g packet that is biodegradable and has a time limit once opened, the larger packets are not biodegradable and don’t have the time restriction on use.This time I used the product soon after purchasing to make Sake. I used the packet with some steamed mochi rice in my yogurt maker to make a Koji starter to convert an additional batch of steamed mochi rice, water and wine yeast and fermented it in a 5 litre container with an airlock.The eventual result was a rather cloudy but tasty sake which after passing through a coffee filter and bottling turned out rather nice!So the product did the job I wanted very well, I neglected to taste it at the point where it was amazake but as I’m definitely making the sake again I will do so next time.Am happy with this product and will purchase again.

Great Koji
I used this to make my own miso. I followed the directions on the back of the pack and was surprised by how simple it was - especially with the step-by-step photo guide on the Umami Chef website. It's great to see them using sustainable packaging too.
