Great dried,salted cod
This was some of the best cod we have found on-line. Almost impossible to find in our city, but Amazon found a great source here. We found it was decently dried and salted, but the user needs to wash and rinse it at least 3-4 times to remove the salt. Wonderful texture and flavor,

Bella Baccala!
Arrived on time and is the BEST I've purchased. It was shipped from Staten Island, New York, to my location in the Southwest and the fish was fresh and high quality cod. When it arrived, I kept the paper wrapping it was wrapped in and placed it in a dish towel and then placed it heavy duty zip lock bag until I was ready to soak it. This way my refrigerator didn't smell and the fish stayed fresh. About two weeks later I was ready to begin soaking process. I used filtered water. I soaked it for approximately 48 hrs. Before boiling. You must change the soaking water every few hours. If you like saltier taste then soak it for a minimum of 24 hours but you have to change the soaking water consistently. Then boil the fish and prepare it as you like. My grandmother made it in a salad with lots of lemon, EV olive oil, red onion, Celery, and fresh Parsley. There's many ways to make salt cod including Porteguese style Pasteis de Bacalhau or cod croquettes. You can tune into several you tube videos if you need help.

This bacalhau is the real deal! Don’t forget to desalt it.
I’m Brazilian coming from a portuguese family so I’m very, very familiar with Bacalhau (portuguese name for Baccala). The fish arrived perfectly salted and tasted amazing. This bacalhau is the real deal. It arrived by mail wrapped on paper and a plastic bag inside of a small squared box. Those who are not familiar with salted fish would think its weird but salted fish don’t need to be refrigerated and they can last for a long, long time. So even if the packaging is a little moist don’t worry (it’s the salt retaining humidity in the bag).Before preparing it remember to let it desalt submerged in a container full of cold water for at least 24 hours. Make sure to replace the water every 3-4 hours. In the end, before cooking it taste a piece from one of the thickest parts to make sure it’s really desalted (you can taste it, don’t worry no bacteria can survive this amount of salt that’s why you’ll see that after desalting it it will taste almost as if it was semi-cooked, fresh and preserved - it won’t taste raw like a sashimi would).Once it’s desalted buy a good olive oil, potatoes, garlic, onion, eggs a d black olives, search for a good portuguese recipe such as Bacalhau a Gomes de Sa or Bacalhau Ze do Pipo (the ones on the pictures I posted) and enjoy it. This bacalhau is the real deal!!

Excellent quality, real baccala!
Bacalao a la Vizcaina or Basque-style cod has been our family tradition through generations. Since I was unable to find salted cod in our supermarkets, I looked online and I found this product. I was skeptical at first since I was unable to check the quality of the fish immediately, but I decided to give it a try. The amount of cod received was more or less for the same price that I would spend locally. However, the quality was awesome! I prepared the chunky pieces of cod according to our family's recipe (leave it in water 4 times, change the water every 12 hours, clean it (almost no skin or bones!) mince it, add it to the garlic, onion, bay leaves, and tomato sauce. Let it simmer for 15 minutes before adding cubed/cooked potatoes, olives, and pepperoncinis. Perfect with some Italian bread! This was one of the best cod dishes that we have had in years!

Amazing Customer Service
I am normally not one to write reviews. However, this is one review I must write so everyone will know how wonderful and gracious Frank and Sal's Market is. I grew up eating salted cod and I know excellent cod when I see and taste it. This cod is by far the best I've had. Very thick, no bones, and so fresh. After my first order, I ordered a second one. Due to the pandemic, and being physically compromised, I usually don't open my packages for a while. I made the mistake of leaving my cod in the package for too long. When I finally opened it, the cod was soggy and it had a very strong odor. Something was wrong and it was my fault. It was also a time when the temperature outside and inside of my home was very high. I knew it would not be a good idea to eat it. So, I called Frank and Sal's to see if my decision was correct. I spoke with Robert and explained to him that it was entirely my fault and I just wanted to know if the cod can be salvaged. I was prepared to take the loss. Without hesitation, Robert said, "I'm sending you a fresh batch right now". At no charge!!! I had no words. I told him he didn't have to but he insisted. I want to publicly thank you again Robert for being so kind. Your generosity touched my heart, especially in this time when on any given day, anything can happen. I pray that you and the entire Frank and Sal family will be blessed with Long life, Great Health, Love and Prosperity. God bless!

Authenticity
Second order of Baccala from Sal&Frank. First order was perfect, it actually was baccala. This order, which was for the holidays was a mixture of 1 good cod and 2 cod substitutes. The order comes in a pack of three. Time sure has a way to calm the emotions and betrayal of authentic food because this review would have been full of fire. The 2 cod substitutes are either Hake - Haddock or whatever comes from China. The central muscle (spine) was hard to cut through after cooked. The flaps (which normal cod does not have) were torn and tattered to remove the spines). Since I don't know what this fish is I'm guessing at the "Spines." It's been reported that mis labeling is as high as 60% in this industry. This experience ruined my holiday dinner as I threw everything away, inedible as baccala. I've had baccala as a child, my mother was an expert Venetian cook. I followed her traditions and cooking skills. Baccala and polenta was a special dinner. Sad and disappointed that greed or ignorance has taken over our most basic need - good, authentic food that feeds the body and the spirit.,
