Q: Do these work well for people with noise sensitivity?

Because they are over-the ear, you get about 20 dB reduction of ambient sound. I'm not extremely sensitive to noise myself, but I find that playing music quietly when not on a call can effectively keep me from getting distracted by people working around me. I prefer to wear these to earplug type attenuators, because my ear canals are sensitive to having plugs shoved into them. I hope this is useful information.

Q: Is this compatible for USB use?

No, not without a USB audio interface. These Headphones have have a 3-pin professional XLR connector(for its microphone) and a 1/4” Stereo plug(for the earphones). These will work well with a USB Audio interface that has the corresponding XLR and 1/4” connectors.

Q: Is there a specific wind screen I should get for this headset?

It does come with a small foam wind-screen

Q: Can you remove the microphone and keep it off?

No. ..or at least, not that I can tell. It doesn't appear it's meant to be removed. There is a tightening thumb nut to lock the mic in place, but nothing visible to actually remove it.
