Q: does the string keep the hat on in heavy wind? Does it keep sun out?

Yes on both counts. Light and comfortable. I had one and just completely wore it out. With the vent holes in the top wind isn't a problem.

Q: Does this have a cloth sweatband?

It does! It's stretchy fabric that has Stetson written/ woven into it.

Q: Is this straw hat flexible/soft enough to form to the shape of your head? My head is wide so a stiff hats w/ narrow oval opening hurts my temples

Yes, the hat is pliable and flexible to fit to your head. Also you can steam the hat to make it more flexible
