Half the sodium of Reduced-Sodium Soy Sauce
This is essential for me -- since I love sushi and stir-fry vegetables but need to keep my sodium intake lower than 2,000 gm per day. (FYI -- even reduced-sodium soy sauce is a Sodium Bomb -- 590 gm per T vs 280 for this sauce) I sneak it into sushi bars in a little rubber container and mix it with juice of lemon wedges to make my sauce. And because it's thicker and a more bold taste -- it takes less of it to do that than with soy sauce. I bought several bottles 15 months ago, and periodically check to make sure it's still available. Absolutely essential for Asian sauce-lovers who have to watch their blood pressure.

Nice change of pace sweet Tamari
We were served a slightly sweet soy/tamari at a Japanese restaurant in London two years ago and when I asked the brand was disappointed to learn it was house brewed, so no way to get it back home. This sweet Tamari is a little sweeter, not quite the amazing richness of that house-brew, but not all the way toward the cloying sweetness of a Teriyaki. It does not replace the soy sauce on our Friday sushi nights, but adds a second. I see us repurchasing when this bottle is close to done.Update: Third order (bottles 4&5) - so we really like this stuff. I use it along side traditional soy, daughter mixes. But the delivery for this order was living dangerously. Two bottles, zero bubblewrap, sharing a simple padded envelope. When I picked up the envelope from the door stoop the glass bottles slammed together. Poor form Amazon! Fortunately the bottles survived.

This is good on all kinds of things like meat, chicken, rice, veggies and ramen.

Adds a brightness and tang to marinades and sauces
This was a HUGE surprise! We love San-J tamari (Celiac person in house) and trust the brand. Seeing this intrigued me. What can it do up against all the flavor of the tamari. Answer: a lot! You don't know what you're tasting but, WOW, this brightens up the flavors and completely changes your marinade game. LOVE THIs!!
