Q: What are the ingredients?

Brynn, here we go...Ortiz Anchovies contain anchovies(!), olive oil, salt. From my first jar I have loved them. Best tasting anchovie on the market. Never had a bone. Never overly salty. They are what an anchovie should be....delicious! They are a producrt of Spain. You will love them.

Q: How long will these be good stored in the fridge after opening?

A long long time. The trick is to make sure they are covered in oil. Any part exposed will go bad. The real question is why put them in a Fridge? I buy these all the time unless I can find salt packed at a market. As long as they are tightly closed and covered with oil they taste better to me being kept in the pantry in a cool dark spot just like olive oil. If you put in fridge the oil will condense and alter the taste. You need to take out about 30 minutes before use to melt the oil back to its natural state. There is no reason to refrigerate. These are old style anchovies and were made this way long before refrigerates were around. That is why they are cured in salt then packed in oil. The best temp for oil storage is 60 to 70 degrees. I know some folks who store olive oil in a red wine section of a wine cooler. These easily are good for a year after opening in or out of fridge. Keeping in fridge degrades the quality and taste to me.

Q: what is the expiration date on these?

It's not clear to me whether the day printed on the jar is an expiration date or a "best by" date. I strongly suspect the latter. In any event, on the ones I ordered six months or so ago, the date was 8/31/19.
