Perfect anchovies

These are just about the best anchovies you can get. I reserve them for salads or sandwiches or other dishes where they can really stand out. If you’re just wanting a hint of anchovy Unami or richness in a sauce or dressing, use something cheaper. These do not need to be refrigerated. After opening, just assure that the remaining filets are submerged in the oil before recapping and just keeping on the countertop. Don’t worry; if you like anchovies, these won’t be around very long. Oh, and when you’re done with the anchovies save the oil. Add a tablespoon of good vinegar, a bit of Dijon mustard, a pinch of salt, a twist (or two) of black pepper, and maybe a small clove of garlic ground to a paste. Shake well and you get a bonus salad dressing. Note that, mercifully, these no longer come with the little fork. In conclusion, some of the world’s best anchovies and worth the price for great dishes.

Awful
This was my 8th purchase from Taylor's Market of Ortiz Anchovies. Until now, the quality was the best, and I was content to pay the price; but the 3 jars rec'd today were all sub-par. Exp. date 31-10-22, more than three months away, but the anchovies are not tightly packed, soft, and even worse that tins such as Roland. Probably stored at too high a temperature. Can't return groceries to Amazon. Taylor's Market, please make me whole.

Amazing quality

Taste great, expensive, all three jars were oily even though sealed.
These are quite good. Just the right saltiness, nice texture. I have two complaints: First, each of the three jars had oil on them... not a lot, but definitely oily. I've only opened one jar, and interestingly, when I opened the lid, the seal seemed quite good and intact... good "pop," etc. But It was a bit inconvenient to have oil on the jars nonetheless. Second, they are pretty expensive, and as others have observed, there's more oil than anchovies. I'm happy with them, but at twice the money of other jarred options, I'll try another brand next time.

Worth the money in my opinion
Ok, first I love anchovies, I have tried so many brands, and this is my advice: jars are always better than canned, Spanish and Italian brands are better of the jarred (in cans, origin doesn't matter as the quality will be hit or miss), and Ortiz is the best and most consistant flavored. There is something about the amount of salt and the texture that is always perfect in every recipe and as stand alone. Especially as a stand alone, like in pizza or on toast, Ortiz always has that rich umame flavor, never fishy.

This is the umami essential ingredient.
I have tasted almost all of the anchovy brands on the grocery shelves and this brand is clearly my favorite. They are on the pricey side but when you’re making a delicious Caesar salad for friends and family, the beauty of that salad is the freshness and flavor of the ingredients. So don’t crimp on the anchovy budget when the price difference is negligible on a per serving basis. Sample them raw and you immediately notice the milder, smoother taste. Make your Caesar salad dressing with them and the richness of flavor is simply delicious. Buy plenty because you’ll use them when you have them.
