When you need to cut through bones!
I am a poultry farmer who sells live chickens and ducks to customers. I often provide additional services like slaughter and processing of the birds. Since many of my customers are local college students, they don't have the kitchen space to do this themselves (not to mention the horror of their typically American middle class housemates LOL) so not only will I pluck and clean the birds before they take them, but also prep them for cooking in a stew or curry. Many cultures believe that much of the good flavors come from the bone and marrow (they aren't wrong) so they cut the bird into approximately 1" chunks, not just the neck, back and ribs which can be cut up with the average asian style cleaver, but also the wings, thighs, and legs. A very young bird, especially those fast growing ones found in the US grocery system can also be cut up with an Asain style heavy cleaver... But not the slow growing traditional breeds or spent layers (old laying hens). For these birds you need a very heavy duty cleaver that will both shatter the bone AND maintain its edge. THIS IS THAT CLEAVER! I Tried half a dozen highly rated heavy duty clevers before I found this one and this one was TWICE AS GOOD as the best alternative. The backside is bacially a narrow hammer you can use to crack the bone, then the blade side chops through it. Use a steel to bring the edge straight every 10 to 12 strikes against bone and you'll have have a remarkably effective tool for even the toughest jobs!MAKE SURE YOU HAVE A HEAVY DUTY BUTCHER BLOCK CUTTING BOARD- SEE PHOTO
