Q: Can I use this to connect 16gauge speaker wires?

It will connect the wires but I highly doubt that the gland on the end will seal on the cable. Speaker wire is generally flat side by side conductors. This is designed to seal on round cables.

Q: What are the additional yellow rubber rings for that came in the package? Where are those supposed to go? Thank you

Think these are washers to make sure the connection has a waterproof seal.
