Victorinox Butcher Knife
Sharp, sharp, sharp. Well-made and easily cuts large pieces of meat. It also slices meat cooked or uncooked with ease. At first, I didn't like the look of the handle, but it feels comfortable and serves its function.Overall, a great knife and highly recommend, especially at this price point.

A great butcher knife for the money
I cut meat for a living and I've tried blades twice as expensive as this Victorinox but this knife won me over because it's got a good blade that holds a decent edge and the handle is easy to grip even when my hands are wet. Polished wood handles look nice but they are not practical if you cut volume. I go through a new butcher's knife about once a year and my last 3 purchases were this exact knife.

Great Tool
The quality of Victorinox blades is well known, so I am not going into that.I am going to review the other aspects starting with the fibrox handle.I have large hands and the handle fits very nicely, it is well designedfor ergonomic function. The added benefit is the nonslip design. Meat is wet and fattyand this knife feels like it is glued to your hand while cutting. (ALWAYS use a cut resistant or stainless steel mesh glovewhile cutting meat. Did I mention ALWAYS) The blade is sharp, it is 10" long and 1 second of distraction could lead to your blood in the meat and a trip to the ER. The Granton edge works great because it helps the meat release while cutting, this allows you to make smoother cuts with less effort. As a test I used this blade to slice rare prime rib. It was like slicing butter. If you are looking to get a good starter knife, this would be one of the best universal blades you could purchase. It is stiff enough to cut large pieces, heavy enough to make smooth cuts, but well balanced so you don't get fatigued using it. I will be reviewing the 6 inch flex boning and the 12 inch cimeter as well. You can't go wrong with this knife.

LOVE THIS KNIFE!
Granton edge bullnose is the only way, do not believe the breaking knife hype. I have used them all and this has become the only large knife in my scabbard. It keeps an edge well, does not chip, and the grip is exceptional. I am a professional butcher at a legacy meat market and I slice everything with this knife, from whole clod for grind to pork belly at1/4". You must purchase this knife!

Great for professionals
Use this knife for work and is great for cutting larger pieces of meat like chucks and shoulders.I only use a good steel for sharpen. A couple light strikes down the steel and it is always ready for use.

I hoped it would be as good as the reviews here and on you tube
I unboxed this knife and set sail out of San Diego for Cabo. I hoped it would be as good as the reviews here and on you tube. It was. It worked really well on the tough outer skin of a Derado. I was able to just shave closely in places while preparing the fish. I have since used it alot. It balanced well and so sharp right out of the box. Worth the money.

Awesome knife for a butcher
This is the way to go if you need it to cut meat all day . Super sharp . Nice grip handle and the size is great for roasts . This knife is sturdy and you can def feel your cuts go though the meat wayyy smoother with precision. I def need to buy more in diff sizes .
