Great knife at a good price
I wanted a santoku knife but wasn't prepared to spend up around £100 for what I assumed were the quality brands without being able to first hold them. I went for this particular knife because it was a reasonable price and a known brand. I wasn't hoping for anything to great because of the price compared to a lot of other brands however I was very pleased with what I received. The knife is nice to hold but best of all it is extremely sharp. It just falls through onions like they were soft butter but better yet the way it cuts through tomatos is amazingly smooth. I felt that the blade might not hold its edge as it is quite thin but it didn't need any care for the first couple of months and when I did notice that it was starting to get a bit blunt I gave it a few strokes over a steel and it was as good as new. I would highly recommend this knife for anyone.

Razor sharp
This knife is the sharpest I've ever used. It took a little slice off my thumb the first time I used it.

You need to know how to use this before buying it
All vitorianox knives are of very good quality, I am a professional chef and some are complaining of the low weight but that is exactly the advantage of a smaller santoku knife over a more typical 25cm chef knife. When you are prepping over 5kg of carrots or such you appreciate it being exactly as long as it needs to be. It is very sharp. The fluting is a little shallow and as such doesn't always eject cut pieces as expected, especially on larger more 'adhesive' foods like onions or tomatoes that almost always sticks to the cut edge of knives.Knowing how to sharpen knives PROPERLY is a must for this knife. The blade is very thin and as such needs to have a very consistent angle of attack for sharpening. It must be sharpened to use it properly (preferably every time, before and after you use iy) and as such some might buy this, cut 3 things then its blunt as a spoon and then ruin the blade trying to sharpen it.

All around great knife
Great example of Victorinox value!Great edge, and the usual thin-ish printed steel so ideal for vegetables prep.Light and balanced with a really nice comfortable handle.

A good all round kitchen knife
The manufacturing is quality, meaning a solid, easy to handle knife which feels like it will last. It's extremely sharp and easy to use, and good for most jobs in the kitchen.As other reviews have mentioned, though, it lacks a bit of heft that you might want for certain jobs. a little bit more weight would be nice. In addition, this is quite a bit more expensive than the non-wooden handle but since the wood isn't especially pretty or nicely finished (though acceptable), I'm not sure I'd go for the rosewood handle again.

Speeds up prep time
Speeds up the chopping of onions. Can really tell the difference paying a bit more compared to the Taylor Eye Witness set we were using. It’s a lovely looking knife too, we’re keeping it in the box in the cutlery draw as it’s a lot sharper than other knifes in there.

Great knife - smelly handle
I bought one of these for my girlfriend as a gift after owning the victorinox rosewood bread knife (which I find great). This knife is fine, but whatever they have used to treat the handle absolutely stinks... I can smell it when I take the knife out of the drawer. Every time I use it, my hands stink for hours after. I've tried to wash it multiple times...soaked it, scrubbed it with soap etc...and it persists.Has this happened to anyone else? How do I resolve it?

A knife of real quality
This knife has real quality. Its beautifully made; a beautifully grained wooden handle, so best not to chuck it in the dishwasher but it is perfectly balanced. It cuts like a dream and if you look after it, it will last a life time. Worth every penny.
