Professional whipper
iSI makes a number of whippers, for both the home and professional user. The GourmetWhip is the professional version, which means that it is all stainless steel, dishwasher safe and easily cleaned, which is not true of their EasyWhip home version cream whipper.The 1 quart (1 liter) version is the largest one sold -- they also have half size (500 ml or 1 pints) and a quarter-size (250ml or one cup). The size is somewhat misleading, because you only fill the device half full -- the rest of the space is to hold the compressed gas.Either nitrous oxide (N2O) or carbon dioxide (CO2) can be used. The nitrous oxide cartridges are listed as cream chargers, where as the carbon dioxide ones are called soda chargers. The whippers come with an assortment of tips for making various shapes.There are myriads of uses for these whippers, and I have five of them in various sizes, including the ThermoWhip which has a double-wall insulation and is used to hold hot foods. In addition to whipping cream or making carbonated drinks, the two most obvious uses, chefs like Ferran Adria use them to make espumas or foams of various types. Max's Restaurant in Santa Fe makes an amuse bouche consisting of a thin slice of watermelon that has been compressed in a chamber vacuum, and topped with a goat cheese foam.I would recommend two useful accessories to go along with the GourmetWhip. The first is their cookbook iSi 9012 The Trick with the Whip- Creations Cookbook. The second is the iSi Funnel and Sieve, which fits directly over the iSi shipper, and greatly eases filling it. They also make a selection of sharp tips, which can be used to fill small pastries, bonbons, etc.One of the most intriguing uses of the GourmetWhip was introduced recently by Dave Arnold of the French Culinary Institute. It uses a technique called nitrogen cavitation to infuse flavors into liquids. Let's suppose you would like to make some vanilla-flavored bourbon. Simply slice two vanilla beans lengthwise, and then cut them into small 1 inch pieces. Drop them into the GourmetWhip and add 500 ml of bourbon, and charge with four cream chargers (or use the half size GourmetWhip and cut the ingredients in half). Put the GourmetWhip in the refrigerator for at least two hours, or better yet, overnight. Then, holding the whip upright (NOT upside down), press the trigger to release all of the pressure as quickly as possible. Voila -- instant vanilla extract! What is happening is that when the whipper is charged, nitrogen enters the cellular walls of the vanilla bean. Then, when the pressure is released suddenly, the nitrogen escapes rather violently and blows the cell walls apart, so that the flavor compounds are released into the bourbon, rather than taking months of soaking to accomplish the same thing.

The only siphon you should think about buying.
This is hands-down the best siphon your money can buy. Yeah, it's a little pricy. Sure, it takes more charges to pressurize. Ok, it's somewhat bulky and awkward to store. Point is, this is the most versatile, most durable and easiest-to-use siphon on the market. It's the industry standard in kitchens and coffeeshops for a reason. Hot or cold foams, carbonated fruit and juices, sodas, espumas, infusions, emulsified sauces, simple whipped cream, you can do it all. The 1L capacity might seem excessive but trust me, it is handy especially for carbonating because you can carbonate more liquid while using fewer CO2 charges (which are usually more expensive than N2O). The versatility of the full liter size far outweighs the small price jump up from the half liter size.I tend to use my siphon for infusing liquor/making bitters, making cold brew coffee in a matter of hours (as opposed to days), making dense foams and carbonating juices and various liquids. Cleanup is a snap, just disassemble,rinse, and toss in the dishwasher (except the charger holder, never put that in the dishwasher). I recommend storing the siphon completely disassembled to prevent funky musty smells from developing and also to avoid compressing the silicone gasket when it's not necessary, as this will cause the seal to fail when pressurizing and you will need a replacement prematurely.

Love the vessel, hate the company.
This is a high quality 1L pressure vessel that will meet your demands up to 32bar, regardless of gas used to pressurize it.I said it that way because I absolutely HATE the company for making their "Nitro" system incompatible with their normal system because they used different sized threads. This was completely unecessary and clearly just a money grab because of the booming coffee industry.They market the two different systems as one being safe for N2 (nitrogen) and the "normal" system (N2O for whipcream) not... this is just simply not true. The "normal" isi gourmet is rated to 32bar and even states in the manual it's safe to charge 2 N2O (nitrous oxide) cartridges into their 1L vessel. Doing basic engineering math that adds up to be true. Remove that oxygen molecule leaving just N2 (nitrogen) and doing some basic engineering math again shows that you can charge several standard 2.2gram N2 cartridges into the vessel and still be 100% safe.Note: I'm an engineer, but if you want to verify for yourself just research the ideal gas law.Thus, this begs the question, why is iSi lieing to its customers and making wildly flase marketing claims? Marketing lies to create a flase platform in order to sell a product that is in all essence the same... potential lawsuit is all I see. But hey, I guess they just want take business away from themselves and give it to other N2 manufacturers like whip-it.

Lots of whipped cream
Makes a lot of whipped cream. Quality product and fairly easy to clean. I’ve used this brand commercially before and this model is more durable than previous ISI products.
