Teff is my new FAVOURITE flour!
Now, I bought this as I am on a mission to cook my way around the globe, discovering my new delicacies and dishes without the travel. Hopefully, I can add the travel element one day soon!!Ethiopia was on my list, having enjoyed a delightful meal with friends in an Ethiopian restaurant in Acton, London. The appeal factor for me was eating on low tables, with no cutlery and just these unusual flatbreads called Injera. Well, these flatbreads are made with Teff flour and I initially struggled to find Teff, until I found this product on faithful Amazon.I was able to make these flatbreads, which have a long fermentation period but are just a simple mixture with varying proportions of flour, and then the fermentation for up to 3 days (similar to sourdough!)The white flour is slightly beige in colour, with a fluffy and feathery texture. It seems to be okay for breads, cakes, porridge, pancakes and much more per the website.PROS------1. This flour has a pleasant, earthy taste.2. Teff is a gluten-free grain :)3. This flour is packed with nutrients, like iron, calcium, iron, vitamin B, vitamin C, prebiotic fibre, magnesium, copper and is packed with protein.4. It is an ancient grain, which means the grain has not been Genetically Modified, and is the same as cultivated many years ago!5. Teff is considered a superfood given it's nutrient content, and relatively low glycemic index.6. Gentle on the stomach.CONS------1. It was initially not so easy to source but this may change as the world catches onto this grain.2. A bit pricey but this may be due to scarcity.3. Has an almost feathery/fluffy texture, which may not appeal to all.CONCLUSION----------------My Injera were a success and very easy to cook even in a frying pan. The taste is very unique and a contrast to all the flours I currently use, and that really is a lot. I LOVED the nutty, earthy taste so much that I have now made baguettes using this flour. I cannot fault it, the taste factor is really yummy, and has you wanting to eat moe and more, which given its low glycemic index won't add those pounds! One last thing that I noticed, is that I have an stomach ulcer and acid reflux, after eating this yesterday my stomach was much more calm. The literature states that IBS sufferers claim Teff has been life-changing for them as it relieves inflammation, bloating, cramping and constipation. I have to agree that I did feel much better after eating this, as usually I get awful cramps and pain.I have attached some images of the information leaflet, actual flour and packet for you to check out the product more closely.

Food excellent for Gluten/Celiacs - prefer previous packagin
I juest love Lovegrass' food, and their receipes. Teff is so soothing to one's digestion and no bloatedness and it makes such yummy cakes and biscuits and pasta.Only downside is that I prefer their previous packaging as when it arrived the boxes were damaged and open but thankfully the inside Teff packaging was not pierced or damaged. And be careful as when I took the boxes out of the cupboard to use, the packaging fell out of the bottom onto the floor and thankfully the Teff packaging had not been opened.Aside from all that the food is delicious and dealing with the Lovegrass Company is a pleasure as they are really nice and helpful.

Brilliant gluten free flour alternative!
This product is great. I have used rice flour in the past but sometimes leaves a grainy texture in gravies. Teff flour was perfect in my Christmas gravy no grainy texture so perfect alternative to other flours. Will definitely be reordering!
