Q: Does the show horse stable fit Breyer 1:32 scale stablemates horses (~3 in high by 4 in long)?

Yes, my granddaughter has the Breyer horses and they fit in this stable.

Q: what are the horses made of? and do they come out of the stable to play with?

The horse are made of a very sturdy plastic. The stable has two doors on the back with a gold metal hook-style latch. You can easily open the "stable doors" and let the horses out to play. We've had this toy since June 2013 and it has held up very well -- my daughter plays with it constantly and has even dropped it on several occasions.

Q: What is the length and height of the horses?

They seem to be about 3.5 inches in length and about 2.5 inches high....ish!

Q: Are the horses small enough to pose a choking hazard? AKA would they fit through the opening of a paper towel roll?

Hi- No, they are not a choking hazard. I tried to put one of the horses in a paper towel roll and I could not. They stand about 2 1/2-3 inches tall and maybe 3 inches long.
