Works like a charm!
This is a fantastic pan! I followed the manufacturer's instructions and the cakes literally fell out of the pan when I inverted it on a wire rack.Nordicware instructions say to wash first. Use cooking spray with flour --e.g., Baker's Secret. (I used a round pastry brush to make sure the cooking spray was evenly distributed.) When you put the batter in each cavity, press it in with a spoon to so that it fills all the decorative details of the pan. Then place a towel on the counter and tap the pan several times. I did this pretty firmly because the first batch had some air bubbles that left small gaps in the top of the cakes. Not a huge problem after the glaze or icing was added, but avoidable.Once the cakes are baked, let the pan cool for 5 minutes and then invert over a wire rack. I've made multiple batches and not one cake has stuck!

I Love This Pan!
It's heavy duty and beautiful! I used cooking spray with flour and had no problem with sticking. The only downside is one box of cake mix made two batches and it has to be (hand) washed in-between--drying takes a bit of effort to get every crevice before it can be sprayed again. Still, it makes beautiful cakes!

special cakes
I love this pan, and find that I only need one pan, which is good because it's not cheap, although it will last forever. I use a recipe for a simple, basic pound cake: 1 stick of butter (4 oz), 2 USDA large eggs, 2 Tbsp milk, 4 oz sugar, 4 oz flour, 1/2 tsp baking powder, 1/2 tsp vanilla. These proportions fit the pan beautifully, making a dozen delicious little cakes.

Pan prep is the key
This is my third mini bundt pan. The important thing I learned from my first is carefully prep the pan. With that first pan I was not careful with oil and flour and to this day I still have issues with sticking when I use it. As a result I now use a baking spray (Baker's Joy is the second one I tried and I like it). I also use a pastry brush (or a set of Wilton cake decorating brushes on pans with intricate details) to make sure every well is covered with baking spray. This pan bakes perfect knots every time.Since we're a small family I halve each recipe so I don't have to worry about reusing the pan. With some recipes, though, I just make a couple of cupcakes with any leftover batter.I finally found and watched the NordicWare video so after filling each well with batter, I tap the pan a few times on the covered counter. Then I wait 10 minutes before putting it in the oven. I rarely have air pockets in the design any more.I cool the cakes in the pan per the time specified in the directions and they slide right out.Cleaning is usually a breeze if I rinse it in hot water as soon as it has cooled enough to handle. Then I soak each well in a little warm soapy water for just a little bit. “Nail Tees”, manicurists use them, are essentially pointed q-tips and are really handy to remove anything that happens to stick in the nooks and crannies even after the pan is dry.

Great Pan
I love this pan for little bundt cakes but you need at least two.
