Unclear audience, gaps in information
I docked a 1/2 star for very significant rendering errors in the kindle version across multiple platforms, and 1 1/2 stars for issues covered in the comments below. Also, this is an English review of the French text.I'm still not quite sure what niche this book is trying to fill given that it's not for beginners and not terribly useful for a veteran. Definitely not a book for amateurs, both in terms of the scaling of the recipes and assumed knowledge, but perhaps a source of inspiration if you're looking to improve your professional viennoiserie. I was disappointed by the lack of things like crosscut lamination recipes and production equipment suggestions. As ever, but somewhat sadly, the best resource for anyone interested in viennoiserie would be an experienced teacher or mentor rather than a book. That said, the book is undeniably gorgeous and I'm sure has utility for someone out there. I won't factor the price in my rating because it is a hardcover, specialty imported book, but that could be an issue for many potential readers.
