Is this product suitable for structural repairs of floor joists or foundation wall studs?

I would not think it would work by itself for a structural repair. It might work for a structural member in compression such as the base of a pillar. I don't believe it would work for any member in tension and the product would simply crack since it is not flexible. I used it to repair the face of beam which was not carrying a structural load. I also used to stop the rot on the bottom of pillar but most of the pillar was still there to carry the load. On the foundation wall studs you might try some angle iron. That what I used on a roof joist repair and then I used the product to fill in the gap in the beam. The product it self did not carry the load. The angle iron did.

I need enough product for 108 sq. inches. Will the above kit be enough?

The kit has two 6 ounce containers of the epoxy that you mix together, which gives you the equivalent of 22 cubic inches. This would only cover 108 square inches about 1/4 inch thick. They also sell the epoxy separately in pint and quart containers. The 2 pints would cover 108 sq inches about 1/2 inches thick.

The area I need to repair is about 2 inches wide and 8 foot long. It is level at one end and 1 inch higher at the other. Will this product work here?

The 24 oz kit would not be enough for the area you are describing. If you have a solid area that you are working with, you may want to go with the two part woodepox in the quart cans. You can also use saw dust to fill in voids mixed with the liquidwood if you are working with wood rot in this area to cut down on the amount of woodepox to be used. The results trump the price spent.

I have a dining room that had water spilled on it and it buckled. Does the Wood Restoration kit fix this problem?

It will not fix that problem. This product is more for fixing rotten wood as you might find on outside window frames and the like.
