Q: Can this be used without the wheels?

Yes no problem but it Is very stable with wheels attached

Q: Is this item easy assemble for bootsales? I need to be able to put it together and take it apart very easily and pack it flat again afterwards

Not very easily. There are spring buttons to release the two side bars, but the catches are half way up the side bars, meaning the whole base and half the side bars come off in one big piece. You would then need an allen Key to disassemble the rest.

Q: Hi i'm very interested in the product but the height of the space i have is 150cm maximum. could i adjust to this height?

It's some while since I bought this and assembled it but I'm sure there is no versatility in its construction to adjust the height apart from not fitting the casters. This would lessen the height by about 10cm which isn't quite sufficient to fit the space you talk of.
