Great product at a reasonable price!
This a great product, easy to work with and gets the knives hellish sharp.There are other products of the same brand out there that are much more expensive and I’m sure do a great job as well but this work plenty well. Trust me, you can’t/don’t need to get your knives any more sharper!

The long-sought solution
For years I sought a way to keep my two most heavily-used kitchen knives sharp. I tried several department store sharpeners, none of which worked. I also tried a small wet stone I bought when I was twelve to sharpen my "Little Swede" pocket knife. But I could never get a good edge with it. So I checked out America's Home Kitchen, and they recommended the Chef's Choice sharpener. I bought the two-stage model (with honing and polishing wheels only, no beveling wheel) because my knives were still in fairly good shape despite my clumsy efforts to sharpen them with inferior methods. The beveling wheel makes sense if your knives are in rough shape or if you like to buy used knives. At first, the Chef's Choice sharpener rattled alarmingly, but once it broke in, it ran smoothly and quietly. It works well. I use it weekly now to hone and polish two stamped Henckels knives that get daily use. I can return both blades to factory sharpness (or slightly better) with just a few swipes; the built-in guides ensure that the sharpening angle is always right. Keep in mind that this knife sharpener works only with thin-bladed knives. It does not sharpen my old "Little Swede" pocket knife. But I'm satisfied with the purchase.

Works Well NOT Fast
I like this sharpener. I got tired of sharpening by hand while this machine is not fast it's faster than hand sharpening.Read the instructions! They are detailed and thorough and necessary. First time sharpening chef's knives will take a while to establish the new 15 degree profile. Start Coarse and draw the blade slowly though the guide. Allow 20-30 seconds per pass for an 8 inch knife. Make the same number of passes on each side. Once the bevel is formed repeat the process on the Fine side.Once the edge is established it can usually be dressed on the Fine side only.

This this is a great sharpener. I would suggest everyone who likes to cook and needs sharp knives to buy one. Read the directions and follow them you will have no problem. Awesome product. A very good value. Will sharpen your knives to extreme edges worthy of chefs to use.

Good sharpener
I sent this to my brother-in-law. I have had an earlier model for several years. While it doesn’t quite get the edge as sharp as a scalpel, it comes close. Unless you have great skill at manual sharpening, this is probably as good as it gets.

Great, great sharpener!
This is a great sharpener! Because it is sharpening your knives to an Asian type of blade, it is changing the angle of the honed surface. So the first time you use it on your typical chef's knives you may want to run it through a few extra times. But once you are done your knives will be razor sharp. I try to keep all of my knives fairly sharp, but now there is no comparison to how sharp they had been in the past. I hone them every few times I use them with a honing rod, and they are super sharp for a long time. When this one goes bad years from now, I will buy another. It's that good.

This device does work, and better than expected!
I just received my Knife Sharpener tonight, and pulled about 7 of my daily used knives. All of them turned quit sharp, much more than I had expected.The machine does make a bit of noise, but to me, that was expected and didn't bother me at all. It only took a few passes for each #1 and #2 to get them all very sharp! So much I have to warn the family to be careful now when using them.Super satisfied!
