The best Caribbean hot sauce ever!
A friend brought me a small bottle of Baron sauce when he returned from a recent trip. It was amazing. The perfect blend of spicy, fruity and hot. I am glad to have found it on Amazon in a larger size.

A wonderful sauce, if you can get it to arrive unbroken
Just an extraordinary, flavorfully heated mustard based sauce. Highly, highly recommend it for almost any dish.I’ve always ordered this from Amazon for the last few years, but recently ordered two, they arrived in separate packages, both broken with no way to refund. Good luck to the rest of you!

Best HOT SAUCE IMO
Baron's makes the BEST HOT HOT HOT Habanero sauce in my opinion. I discovered it on St Lucia and fell in love. At first just one drop is positively NUCLEAR, then it grows on you. Since capsaicin is a neurotoxin, you develop a tolerance and need more to get the same bang. This is a common phenomenon.I brought back several bottles and went through them, then needed to find another source, not having travel plans to return to St Lucia. It was only then that I discovered that this is actually a Hot Mustard Sauce. It was so hot and flavorful I just didn't realize it was mustard-based! And I don't care for mustard!!!After buying a case of bottles from the local ethnic food $tore, once I went through them I thought of searching the internet. Who knew there were larger bottles???This purchase was ideal. A large bottle (three times as large) for the same price as a smaller one, it came quickly, was fresh and had an expiration date three years hence. I will go through one bottle in about two months!I cannot recommend this higher for anyone who likes his sauce HOT, flavorful, and yes, slightly mustardy.

Captures the natural fruit character of hot peppers
See my update below.I didn't like Baron West from the outset. Initially thought that it was a bad bottle. But retasted it; not bad but not good, either. I think that this hot sauce suffers more from omissions, rather than bad flavors. It has heat, salt, some bland acidity, but little in the way of sweetness. It doesn't strike me as having any real character. By that I mean it has none of the acidic bite and spices of Pickapeppa red hot sauce (the scarce one, not to be confused with the A-1 style Pickapeppa), nor the sweetness, mustard or fruit of other Caribbean-style sauces like home-made Inner Beauty (you can find recipes online; possibly the best hot sauce ever made, and as Caribbean as they get). If I had to try to describe Baron West to someone who has never tried it I would have a hard time drawing similarities to other sauces. It has none of the smokiness or umami of Cholula or La Valentina, none of the garlicky character of Sriracha, none of the savory acidity of Tabasco or Frank's. Aside from the heat, about the only other word that I can think of is "bland." There are just so many other good hot sauces, including ones that you can make at home for a couple of dollars; why bother?Update 1-4-2015: I'm feeling a bit chastened after trying this sauce again. For all of my negative comments about it, it has turned out to be pretty good. In fact, it captures the fruit flavors like few Habanero sauces do. Not flashy or overpowering, this is amazingly good for a factory made sauce.With respect to the concerns about the coloring agent that Baron adds to this sauce: yes, it would be nice if all sauces were all natural. But you would miss out on a lot of good ones if you were that picky. Furthermore, there is no study proving that this dye has any harmful or even undesirable effects.

Really good hotsauce!!!
I tried a similar type Hot Sauce while on a cruise excursion in St. Lucia at a local restaurant. The restaurant had a Creole sauce served over rice with fried fish, this alone tasted great. However the restaurant had this little bowl of hot sauce (not sure if it is exact), combined with the meal it elevated the food experience to a whole different level. The hot sauce has a nice heat to it provided it is diluted with other foods (alone it is hotter than most hot sauces). The flavor is so complex that it sets itself apart from other hot sauces that focus on just the heat. When I returned from the cruise I started searching for a hot sauce that could compare. I found the Baron West Indian Hot Sauce here on Amazon and figured since it is made in St. Lucia it must be the same and I had to give it a try. I was not disappointed, everyday I try it on new food dishes and keep finding out I love it on just about everything.

Years ago I went to St Lucia and came across this hot sauce. Everyone in my family loves it!I was able to find it on Amazon and will be forever thankful.It has an amazing taste without being too overpowering. I don’t need a burning hot flavour that has a gasoline aftertaste.It is a perfect heat that has an amazing taste.

Vibrant and fresh flavour with a nice punch of heat.
I used to buy another brand of Bajan hot sauce but after Auntie change her recipe (I think)... I decided to look for a new sauce and bought a bottle of Baron West Indian Hot Sauce.The sauce is on the thicker side, more akin to a ketchup, than some of the thinner sauces out there. It also has the same glossy finish as ketchup. The flavour is lovely, with a nice balance between the taste of the chillies, and the mustard. The mustard itself tastes great too. Nice and vibrant. The sauce has a balanced sweetness, and a decent kick of heat. Personally, I'd like just a touch more Turmeric but that's not a criticism but rather that a preference. I also think that the sauce tastes like it uses good quality vinegar. I find that so many hot sauces are let down by tasting like they use cheap vinegar. I make my own fermented hot sauce, so I know that the quality of the vinegar really matters. Whatever Baron uses taste good though.I love it mixed in with baked beans. With a tiny pinch of Turmeric, a little bit of sharp cheddar, and some Dunn's River Everyday Seasoning. Serve it on top of hot buttered toast.... Scrumptious!

Amazing product
I've been buying this particular hot sauce for over 15 years. I have it on everything. Eggs, hot dogs, hamburgers, sandwiches, soups, you name it. This habit has been quite costly but worth it as I've never found a better hot sauce and I've tried them all. The Barons West Indian Hot Sauce has held a special place in my kitchen. I have always bought the 5.5 oz bottle and been special ordering it from my place so was excited to see this14 oz bottle for a fraction of the cost. Unfortunately the product isn't quite the same with the only difference I can see on the ingredients is using mustard powder instead of mustard flour but it does impact the texture and flavor negatively. Still a great sauce.
