Schmidt Brothers Cutlery, SSOFO09, Stone Cut Forge 9 Inch Bread Knife

I was very excited to replace a couple of knives from my father's block that had been used for many, many years and were not performing well. This is one of the knoves that I purchased, based largely on the reviews. There were not a lot of reviews, but they were very positive. When the knife first arrived I was pleased with it, and I actually used it a bit before passing it on to my Dad. It has a nice feel and the blade was well balanced and quite sharp.Unfortunately, only a couple of months later I was in my Dad's kitchen and when I used this paring knife it was not very sharp at all. Though it has a nice feel, I was not able to bring the balde back to a razor edge. My father was a professional chef for over 25 years, and many ofhte other knives he uses daily continue to keep a very sharp edge and he maintains them all very well. This was a little bit of a disappointment.I was hoping that the Schmidt Brothers Cutlery knife would be a bargain and that the knife would outperform my expectations for a knife that was reasonablly priced. I won't say that it is a bad knife, but it is worth about what I paid. My lesson has been learned and the next knife I buy will be from one of the other companies that I have used for years (and will ikely cost considerably more than this one).

Amazing. I rarely buy knives but after I bought a traditional set and ended up needing one extra sharp knife, I decided upon this one. It's been about 4 months now and it's still super sharp. I use this to cut everything from vegetables to meat. The down tip makes it super easy to cut when I press on the top. This is my go-to knife that's for sure.

This is a nice knife...but not spectacular! I have used to cut potatoes and vegetables. Seems to stick a bit as you are cutting.

the knife i got might be a counterfeit it did not match the picture the sandblasted long black line in the photo is supposed to be to help the knife be non stick according to the description but the knife i got was just a plain generic blade ,contacted amazon but the knife is still up for sale even after being notified by me about false advertising on their site and the blade looks stamped not stone cut and the weiight of the knife seems off the bolster is pretty light weight buyer beware

Bought this as a Christmas gift. The first thing we did was pull it out and use it that day. Very high quality knife, well balanced, chops amazingly well!

I wanted a good quality knife for the kitchen. I liked the idea of the down tip. Good sharp knife!
