Great Starter Vegan Cookbook for Novice/College Cooks as well as the rest of us
Nicholds writes the Vegan cookbook she wished she had had when she was in college and first learning to make her own meals all the time once she was off-campus and no longer eating on the college food plan. Since this is a cookbook geared for College Students, there is some great material early on that are about Vegan eating, shopping, and pantry stocking basics. Since this is the very target audience of this cookbook, the coverage of Basics really is important where with other cookbooks which weren’t per se targeting Beginners, I found extensive coverage of that superfluous elsewhere. Here, it matters and is right on target for the precise audience for which this cookbook is intended.And on that note, since this is a cookbook targeting Beginner young adult cooks, perhaps new Vegans, or Veg tending cooks, having a lot of photos would really have been useful. But this cookbook sadly is scarce on the number of illustrative photos.Thankfully, for all of us, including all those new cooks and new vegans, there is Nutritional Information provided for each of the recipes so they can learn that at the same time as meal preparation and grocery shopping. She even provides some tips about making use of the often required Meal Plan many colleges make students opt into for at least their first year if not also their second year.This cookbook has a terrific layout including not only the Nutrition Information at the bottom of each of the recipes but also just above the title of the recipes is a little faux Red Crayon writing of the Per Serving USD price. How great is that when you’re managing a strict food and grocery budget?My fiancé is going to LOVE all the chickpea based recipes in here including a Vegan variation on the classic Italian Wedding Soup.Seeing as college students, just like the rest of us, definitely have a sweet tooth, the 15 Desserts recipes, including Nice Cream in 3 different ways, all look terrific. I appreciate that the recipes she selected to feature all look easy to make, things like cookies, dessert bars, and Microwavable Brownie Mug cake.The Table of Contents is as follows for these 145 Vegan Recipes:Chapter One: The College Ready VeganAll about cooking tools, your kitchen, and stocking your pantry.Chapter Two: BreakfastYummy smoothies, Overnight Oats (5 ways!), and muffins and cups including a Chickpea Omelet cup. For college students, this chapter is going to be great.Chapter Four: Sandwiches and SaladsChapter Five: Snacks & SidesLooking forward to playing with BBQ Cauliflower WingsChapter Six: Main CoursesPasta galore as well as legume loving luscious recipesChapter Seven: Desserts (!!!)Chapter Eight: Staples, Sauces & DressingsThis is really a great chapter for assisting new cooks to think to prepare their own sauces. Additionally, being Vegan, managing your own sauces and dressings means you can personally manage making sure to avoid including any flesh-based ingredients. Prevents being dependent on jars and bottles of mass production. Make it yourself.She closes with Food Preparation teachings and guidelines as well as wonderful secondary resources like Ghandi and the rise of Veganism. I’m going to have to read that one personally.Highly recommend! I really love this cookbook. It’s just terrific for colleges students cooking on a budget, both for those wanting to fully embrace veganism and for those wanting to eat veg at least weekly or something. It’s just perfect for young and new cooks. I just wish there were more helpful photo images.Some of the photos I include are a little blurry on purpose so as not to give away recipe details, etc, just to give you and idea of what the recipe pages look like, etc.I hope you found my review helpful for you in selecting this book for yourself or as a gift to a new cook. Needs Pictures of Recipes, But Otherwise A Good Cook Book
This book lacks photos of each recipe. We really prefer recipe books with pictures. But, the recipes look enticing. I really wanted a hard cover, but this book looked good so I ordered it even though it is paperback. The cover is thick and durable. It even has a nice feel to the cover, as though it has a waxy smooth coating on it. I recommend this book, but do wish it had photos of the recipes and that it was a hard cover.

There are some good recipes in the book for one or two people. However, she uses oil with a heavy hand, when there is no reason to use it at all. It's easy to saute with water or broth or use applesauce in baked goods. Oil is so passe. That said, I have converted a couple of the recipes to oil, salt, and sugar-free. Still, I expect plant-based cookbooks to follow common sense good health guidelines for obvious reasons.

Chef's school students, maybe
I don't know of any college student, including me, who has the time or space for all of this. Recipes can have 13 ingredients at at time. Many of the recipes are family size, which she says can be shared with friends or kept as leftovers. Why? Because our refrigerators are so large?The start-up stock-up is expensive and complicated, and the user will need more cupboard space than is realistic. There are many "staples" & the cost per person doesn't factor in buying all these things to begin with. I see the given times to prepare are like cooking show fantasies It's a cookbook. I think calling it "college" helped sell this cookbook, and some recipes are for a serving size of one, but I won't be using this the way it's advertised, if at all.UPDATE: Amazon accepted my return request and 48 hours later, I got this reply from the seller:" If you would like to return your item you can ship it to the address below (at your own expense) within the next 5 days. Please be sure to include the packing slip and reason for return. Upon receipt of the returned item we will refund your account for the cost of the item only minus a 20% restocking fee. We are sorry but we can not refund the shipping charges. Not Just for College Students!
What a pleasant surprise! I ordered this book for my granddaughter because she is Vegan and soon to be college age. At the time I was teaching a transition to plant-based cooking class to a group of elderly men and women. Although this cookbook wasn't the reference book used, it sure came in handy when the group started asking how do you say Quinoa, much less spell it. This is a wonderful cookbook for those who are just beginning, at any age. Enjoy the simplicity and really cool way she lets you know if it is to share, cook, or a one pot meal. My granddaughter and I plan to tackle every recipe and put Nonni's special touch on them. It will be a treasured memory for the both of us. Oh yeah! the cost per serving is definitely for the parent who is paying for that college education!.

Great looking cookbook for my daughter
I ordered this for my daughter, who just graduated college, as her first cookbook. She was very excited when she saw the recipes as I kept hearing her say things like, “Alright! Pizza!” She hasn’t cooked me anything out of it yet but I’m looking forward to seeing her try out recipes for the first time. I feel confident that this cookbook will serve her well when she moves out on her own...eventually.This cookbook is such a wonderful idea! Heather does a great job getting the younger generation off of processed foods and into healthier eating.

Delicious Recipies!
Anything by Heather Nicholds is done well - and this new offering is no different. I have not tried all the recipes but the ones I have are tasty and delicious. In addition, all are easy to make, economical, and made with whole foods (i.e. little to no processed foods). The instructions are easy to follow. I like this book because in addition to the recipes, there is a lot of good information about nutrition, health, which is all helpful for anyone - vegan, student, or all other!
