Because of its pinkish colour, which reminded Cipriani of the colour of a saint's robe in a painting by the painter Giovanni Bellini, he named the cocktail Bellini. The drink became a seasonal specialty at Harry's Bar in Venice, one of the favourite venues of Ernest Hemingway, Sinclair Lewis and Orson Welles. It later became very popular at Harry's Bar in New York. After a French entrepreneur set up a trade route to transport white peach pulp between the two locations, the cocktail became a perennial classic.The original recipe uses white peach pulp and juice from Verona, crushed and not blended, slowly mixed with prosecco to avoid excessive loss of gas and served in a flute, because of the difficulty of tracking white peaches and Prosecco in some parts of the world, there are many variations. If we use Champagne, it becomes a Bellini Royal.
