Great miso paste for fish marinade
Used this paste to make miso fish. Cooked both salmon and mackerel and let me tell you, it was amazing. Made the marinade with some soy sauce, rice wine, sake. Then let the fish marinade for 4 hours or so. Baked in the oven and it was fantastic.

do NOT buy: arrives discolored and defective
I ordered 2 of these for my god mom who had tried ordering them a year prior. Was hoping we were just a bad statistic then. Nope: Both that time AND this time the products came discolored, tasted very anbnormal and approaching expiration within the month . For miso that’s not good..and I can’t even return it? Your joking.Amazon you need to remove this product

Not salty
Many brands of shiro miso are extremely salty making some recipes quite unpleasanty salty to eat. This one is mild and less salty, making most recipes really good and there's no guessing if you've used too much.
