Die Kishibori Shoyu ist für mich eine ganz besondere Sojasauce – handwerklich gefertigt und mit viel Liebe zum Detail. Der Geschmack ist wunderbar ausgewogen: nicht zu salzig, mit einer feinen Süße und einer angenehmen Umami-Note, die man bei vielen Massenprodukten vermisst. Man schmeckt sofort die lange Reifezeit und die sorgfältige Herstellung. Diese Sojasauce eignet sich perfekt zum Verfeinern von Sushi, Sashimi, Dressings oder Marinaden. Ich verwende sie auch gerne pur als Dip – der Geschmack bleibt dabei klar und intensiv, ohne zu dominieren.
