Pleasantly surprised
I was very surprised to taste this garum. It's a very unique flavor. Saltiness is the prime flavor profile, but there's also some umami right behind it. I think the best way to describe it is Asian style fish sauce, but much smoother. I tasted the garum by itself, and I was able to taste it with no issues. I couldn't do that with the asian fish sauce. This is very potent so you don't need much to make it work. I bought it for the novelty of finding out what ancient romans ate.

BUYER BEWARE: THIS IS A FAKE AND ALTERED PRODUCT
Please be aware that this product has been altered from its original source. THIS BOTTLE IS NOT PURE ANCHOVY OIL!!!!It has been filled with cheap sunflower seed oil. Most likely three quarters of the bottle is filled with this very cheap filler oil.Furthermore, sunflower seed oil is spelled incorrectly on the bottle. They should put more effort into lying.I had previously skipped the middle man in the USA and bought directly from the producer in Italy.The product coming straight from Italy was crystal clear and had no fillers such as sunflower seed oil.The product that I ordered from JF Distributions was made for the American market with a special blue label not like in the picture shown here.When I sampled the product it tasted very salty and rancid, not at all like the pure Colatura from Italy.I will be contacting them directly and call authorities for fraud.Spending 130$ on sunflower seed oil and salt is not right!!!!THIS IS A FAKE AND ALTERED PRODUCT

Amazing stuff. My Sicilian grandmother used to make a garlic, anchovies, and olive oil sauce for pasta. Only recently did I discover that she was using anchovies merely as a simulated substitute for colatura. Mix this 3:1 with olive oil (3 parts olive oil to 1 part colatura), add a few cloves of crushed garlic and a teaspoon or two of crushed red pepper and mix with Cappelini.. Delicious! I will keep two bottles ready in my kitchen from now on.

LOVE IT!
I bought this product last Oct. and just did a reorder. It is just fabulous. On eggs, on fish, meat, garlic bread with olive oil, rice- anything you want a savory taste. A little goes a long way.. I should point out it is not a substitute for anchovies as one reviewer thought. There is also a very negative review which is not based on ANY facts. That person's negative review is based on an entirely different product and should be disregarded..
