As usual, the stir-ins make the difference
Today's Cugino's soup to test was their "Creamy Cheddar Broccoli." The standard recipe calls for adding six cups of water and two of (whole) milk, bringing to a slow boil, then simmering for 20 minutes. We mixed in half a cup of chopped cooked broccoli (an approved stir-in) and garnished with shredded cheddar cheese (an approved topping). The results were very tasty: not one of those super-thick cheddar cheese soups but a well-balanced broccoli-veggie-cheese soup. However, it was a little thin. So we added a good hunk of margarine and reheated -- the recipe specifically mentions "real butter" as a stir-in but tub margarine was all we had. It was really nice, thick enough, flavorful and not too salty (a revelation among dried soups but consistent to the Cugino's brand, we have found). Using a stronger milk-to-water balance would be good, too, and would probably obviate the need for all that margarine (or butter).Why are we so gung-ho about this format of soup? As mentioned above, it doesn't taste too salty and in fact most varieties contain a little less sodium than the canned kind. We've been paying about a third the displayed price from America's biggest retail store chain. In other words, the price of about two cans of condensed soup, reconstituted (42 oz.) will give the consumer half a gallon of soup (64 oz.) from this mix. Hard not to like!11-07-2014

Cheddar Soup
Cheddar soup with bits of broccoli. A soup base that begs to have additional ingredients. Polish sausage would be great and throw in some mushrooms.

I LOVE Brocolli Cheese soup. Earlier I reviewed This flavor of Bear Creek soup, and gave this five stars.This Cugino's Brocolli Cheese soup is better!This has small pieces of carrots, and small pieces of Dehydrated chicken.I LOVE this stuff.

watery, crunchy, flavorless.
This soup is awful. I cooked it for well over the recommended time and let it sit and steam for over an hour. I added broccoli florets. This soup is watery, crunchy, and flavorless! The dried vegetables in this soup never get tender. I like creamy soup, not crunchy soup. I added a lot of salt and pepper just to get some flavor. It was still horrible.
