This cooks up very quickly and gets nice and thick much faster than regular polenta, but it doesn't quite match up in flavor or body. However, if you're making a recipe with a lot of flavorful ingredients, you probably won't be able to tell the difference, and it saves you having to babysit.I originally bought this for an America's Test Kitchen recipe. The basic premise is that you blend in some tasty add-ins (i liked blue cheese and roasted garlic, or skip the cheese for vegan), then let it set up in a rimmed baking sheet in the fridge. Then cut into squares or triangles, brush with oil and bake in a hot oven til crispy. Tasty, crunchy bites, delicious alone or topped with chèvre, caramelized onions, etc.Also makes great, fast baby food that's good enough for an adult side dish or breakfast--use double the water and blend in a bit of parmesan, roquefort, or your favorite cheese, and/or roasted garlic at the end, plus a little pepper.

Love this product, great price and quality. Just as good as the old fashioned way with cornmeal which took 30 minutes of constant stiring.
