Worst Pan Ever!
This is possibly the worst pan I have ever purchased. I read the instructions and in it they say, several times, to keep turning the pan for even cooking. I assumed this had something to do with the wide diameter of the pan. However, when I actually used it, I realized that the only part of the pan that was hot enough to cook the food was the part directly over the heat source. I was able, while my chicken thighs were cooking in one part of the pan, to put my finger on the part of the pan that was not directly over the heat source ... press hard ... and hold it there ... as long as I wanted. There is absolutely no heat transfer from one part of the pan to any other part of the pan. I was making paella for company due to arrive for lunch and I realized that at this rate I would still be cooking the paella while they were having dinner later that night. Thinking quickly, I got out my 12 inch stainless steel skillet, transferred the meat to that, added the sofrito, rice and broth, and finished the whole dish to perfection. Lunch turned out a great success. This pan would be perfect for any kind of dish you don't have to cook, like as a serving dish for a fresh vegetable platter, or a serving dish for fried chicken cooked in another pan, or perhaps as a serving dish for paella, cooked in another pan. But if you want to cook in a pan, don't buy this one.

When used in the correct sequence this 15" paella pan works quite well. With our induction burner sautéing the different components is straight forward even though the bottom of the pan has bowed up due to local thermal expansion. When the liquid is added to the rice it is important to finish that final step in the oven so the pan can now expand uniformly, which removed the bowing.

My Portuguese mother approves!
My mom came out to visit for my birthday and I requested paella as my special dinner. Well, she forgot her well-seasoned paella pan. I purchased this as a quick fix but she was skeptical. After cooking the paella, she said it was a top notch pan. The rice cooked evenly over the stove and it was so easy to clean.Guess who's getting this pan for Christmas?

Finish is thin and weak
This pan came scratched, i got another. The 2nd one was scratched slightly also. I used it 3 times, set some plates on it to clean amd they scratched it more. Its a super thin and cheap coating.
