Simply put matcha is a green tea powder made from the leaves of Camellia Sinensis (the tea plant). The plants are shade-grown for 4 weeks sometimes more before harvest. After harvest the leaves are steamed to prevent oxidation, air-dried, passed through a matcha kiln at an approximate temperature of 180 degrees. Once the leaves are dried they are destemmed, deveined and stone-ground into a micron fine powder using stone mills. The powder is ground so fine (5-10 microns) it takes approximately 1 hour to produce 40 grams of matcha powder. Only true and real high quality matcha is shade-grown and stone ground, this is very important to remember when looking for a brand of matcha to purchase. Many brands claim to be matcha tea but are in fact not made in this way and are a inferior product. There are different grades of matcha tea as well. Generally it ranges from a ceremonial grade matcha which is the highest quality of matcha tea. This grade is a bright vibrant green! It is naturally sweet and should be clean, fresh and slightly grassy. It should be enjoyed pure with hot water. If it smells off or is yellowish/brown colour and feels course between your fingers it is not a high enough quality to be a ceremonial grade matcha. A secondary grade, which has been called a premium grade, classic grade or a first harvest, are generally best for green tea drinks, lattes and smoothies.
