Wild Burgundy Snails, a timeless French delicacy, are finally available to gourmands in the United States. Their manufacturer, Henri Marie, has been satisfying the most discriminating palates in France since 1938. Served in the world's finest French restaurants, these are the escargot reserved for dignitaries, movie stars and the like. As with all gastronomic delicacies, escargots exhibit varying levels of quality. Henri Marie's snails maintain an unwavering reputation for incomparable products. Their formula is quite simple. They begin with authentic Burgundy snails (Hélix Pomatia Linne), found only in the wild in southeastern France. They are then hand-sorted by size, washed, and cooked in an aromatic bouillon according to the same ancestral standards used in 1894. There are 116 types of edible snails, and the Helix Pomatia Linne is the unanimously proclaimed #1 in terms of flavor and texture. Nicknamed the "Land Lobster", it exhibits a similar texture to lobster, with an earthier flavor. These escargots are 100% natural, 100% organic, low-carb (Atkin's friendly) and have very high nutritive levels. This tin of "Petit" size escargot contains 48 snails. They are the perfect size for cooking into a soup or aspic.

Great size for making escargot bourguinone
Great for making Escargot Bourguinone. I like the smaller size snails...I've tried the extra-large ones from a different company and they were too much like eating my own garden snails. The more petite size for myself is more palatable. Plus they fit better in my escargot dishes from Sur La Table. They seemed pretty clean right out of the can, but I like to rinse them with water before using. Just a quick rinse with water and they were all ready to go into the dishes with butter and garlic.

Good Find!
These were excellent! Family like the small size. Will order again! Not real please, however, about the fact that EACH can incurs a shipping charge of $5.00. Shipping should be reduced if ordering more cans...sure that the shipping cost is not $5/can from USPS. Other than that, great!

These are small and are fixed in a dish, not shells. This brand is fresh and make the proper French style escargot. I don't fix them often but can always trust this brand.

I like my escargots small - I used to harvest them when I was a kid in France, and small snails were considered a delicacy. They are ready to used out of the can - just follow the instructions. Good product that I will buy again!

They are nice and small and taste great
They are nice and small and taste great. Can't eat the large ones because they are too big (for me).

Delicious
I can find the giant ones in any supermarket but my wife doesn't like them and prefers this smaller size which are very hard to find. Glad I found them here. Excellent product.
