Can you remove the plug and reattach it as I need the wire to go through a small hole?

Most if not all electrical appliances will come with a safety plug on it but if so you can cut it off and reattach another normal plug ! Doing this obviously invalids any warranty

is this suitable to run a under counter freezer

It doesn't generate any heat so I can't see why not. I use it under a kitchen counter top (not for a freezer) and it is fine for me.
