Just takes some practice.
EDIT: I was disappointed with this produce at first but the more she worked with it, the easier it got. She just needed to get the hang of it. Changing my review from ⭐⭐⭐ to ⭐⭐⭐⭐⭐.My daughter is currently using it for the first time abs it's not working out well. The (fettuccini) noodles aren't separating properly and it's just generally awkward and difficult to use.

Take others advice and steer clear of this device... Here is my input.
I had such high hopes for this. Despite the number negative reviews I thought I'd give it a try because ...after all this is Amazon and they'll return it. I bought it primarily to use on zucchini since I had a bumper crop this year. Here are the issues I encountered.1. It takes some cumbersome manipulation to load the zucchini. The blade needs to be moved out of theway and locked. But the plastic blade guard would not stay on the blade. I did not cut myself thistime but it would be easy to do if I used it a lot.2. The "easy grip" handle consists of a bunch of blades that stick into the end of the zucchini. Those blades are also very sharp and they stick into only the seedy center of my large and medium sizezucchinis.3. You pull a little lock and release the blade against the zucchini and try to turn the handle and the onlything that happens is that handle turns inside the center of the zucchini and rips out all the guts atthe end, so now you have no leverage to turn with.4. So on to another zucchini... This one was a bit smaller in diameter with handle positioned on the stemend. Still, the spring in the blade is so strong that when you release it, it digs into the zucchini so hardthat it stops it from turning. You can try to start it by putting your hand in the middle of the deviceand turning the zucchini itself but then you risk cutting yourself on the blade. Again...guts gone, noleverage.I did not try this on a zucchini of small diameter because I want large sheets like in the pictures. It might work on a small diameter uniform width zucchini. Probably would have to peel it first...which is why the pics don't show peel on the zucchini. In Synopsis... This thing does not work well on med & large zucchini. Which makes this device totally useless as far as I'm concerned. Anyone with a garden knows it's very difficult to get small zucchini... I only bought it to try something new with my bigger ones....the pictures were so convincing !

Vasta Veggie Slicer
Overall I liked the Vasta Veggie Slicer. It takes little getting used to. You have to push the zucchini or other vegetable down all the way onto the turning handle. It Slices very well. I like the thickness. The blade is very sharp so you need to be careful whhe lifting it. It is kind of hard to lift the blade and lock it into the up position while you are getting your zucchini on the skewer. That is the only issue I have. But once you get the hang of it, it's a lot easier. Just do not touch the blade. I made lasagne with the zucchini sheets, then u used the noodle attachment. I made zoodles out of zucchini. They came out perfect off the Slicer. All the food was delicious. This Slicer makes eating healthier easy and I would reccomend it. Definitely worth it for the price.

Really wanted to love this product
Several friends and I are trying to eat healthier. We’re all hooked on zoodles and wanted to branch out to differEnt slicing methods. The Vasta Veggie sheet slicer really caught my eye. I had some of the gals over for dinner party so we could try out this product. The slicer is very easy to assemble and clean. Operating is another matter. Would not even attempt to slice the cucumber just ripped through the core. Same issue with the zucchini. I was able to turn the zucchini by hand forcing it through the blade. We found the slices to be a bit thick. There is no way to adjust the blade. We softened some sweet potatoes in an attempt to make noodles. Once we could get the skewer through the flesh the potato was too soft and it fell off when we put the blade down. Moving on to apple sheets for dessert. We seemed to have a winner here. The first apple sliced nicely. The second and third not so much. We determined the first was almost perfectly round while the others were not as symmetrical. In closing. I will give this tool one more try. We were all disappointed with it but we were still able to make dinner so we consider that a win.

I wanted to love this product... I do not.
My husband has a gluten allergy and we have been trying to eat healthier so we already do a lot of zoodles. I was so excited when I bought this product because I wanted to make sheets of zucchini noodles for lasagna or of apples for different kinds of treats. This product is HARD to use, you have to have a vegetable the EXACT right size, and there is so much waste. I have tried it several times now and I cannot get it work do what is advertised. It is the first kitchen gadget that I am super disappointed in, even loading the vegetables into it is far more complicated that it needs to be. This is definitely not worth it for the price and wouldn't even be worth it at a half or a quarter of the cost.

Love this little foodie tool! Easy, fun, and versatile!
I really love this little foodie tool, and we are having a lot of yummy fun with it! The Vasta is really easy to use, and my husband and I have been making lots of yummy things with it! So far we've made Apple and Potato Roses in Puff Pastry (which I will be making again very soon!), Cucumber "Maki" Rolls filled with Tuna Ceviche, which were delicious, Cucumber Roll Appetizers filled with mozzarella, basil pesto, and prosciutto, and Zucchini "Fettuccine" Noodles, which we sauteed agli olio (in garlic and oil), and also served with tomato-sausage sauce and fresh herbs! And the things we've made were so pretty that I took photos! The Vasta is easy and safe to use, as the blade is hidden, and it is different from a Mandoline or a Spiralizer, as it makes sheets and flat noodles out of your veggies and fruits! It really is great if you want to get more veggies and fruits into your diet, as you can make veggie and fruit crepes, wraps, noodles, burritos, maki- all sorts of things!
