I bought this Fat Daddio’s 7x3 inch pan to make tall cheesecakes, and it’s exactly what I needed. Rustic and does its job
I started using it right away with the challenge: I had to make soufflé, I didn’t use oil for the pan and I didn’t have a lot of time to wait for soufflé to harden. The soufflé turned out very well, no stickiness. I think that this form is much better than a springform that sometimes has a glitch with locking. The simpler the better.

Very high quality. Fits well in my 6qt. Instant Pot Duo with plenty of room to spare around the sides. Very easy to remove the finished cheesecake. The cheesecake was cooked evenly throughout. Would buy again.

Releases so effortlessly might not need parchment paper??
This is a professional looking baking item. I'll return to update more when I get more cheesecake attempts under my belt. For my first attempt, I used a water bath for making a NY style Cheesecake. Didn't realize that the water could find it's way into the bottom of it which made the crust soggy. But I chalk that up to being a novice to cheesecakes. I've since researched and saw that some have used slow-cooker plastic liner bags - which I actually have a few of. So I'll be using that next time around along with the aluminum foil wrapped around it. What surprised me is how sturdy it is despite feeling quite light. It can hold quite a bit of batter - so I'm gonna test out some recipes (cheesecakes & coffee cakes) to see where the limit is for this. Getting to the design of it... That is what appealed to me, as my first cheesecake attempt was in a 6" Fat Daddio cake pan. I had used parchment paper, but found out later that I needed more than that to get it OUT of that. And that led me to giving this a go, and it was so effective at releasing the cheesecake out that I'm thinking of doing the UNTHINKABLE..not using parchment paper for the sides?! Oh yeah, after getting the cheesecake out and letting it cool. It seamlessly did awesome in my fridge to chill. Very dynamic for a pan to go from oven to fridge without a hitch. That alone impressed me to make even more cheesecakes contrast to my last time using the small cake pan. Overall, if you're considering making cheesecake; I'd definitely would give this a go! After only one attempt, it impressed me so much. Only concern I'd advise against is to make sure to use a slow-cooker plastic liner if doing a water bath! Other than that, was excited to see how it turned out and excited to make more w this! P.S.A. Using GOO GONE helps in releasing the sticky label that everyone has mentioned, FWIW.

Good size, good quality, won't rust, no latch to deal with.
I really wanted the 7x3 " to fit a 6 qt instant pot. That has been out of stock for awhile, so I ordered the 6". I'm sure it'll be fine. i also got two other brands' 7" elsewhere; one was a cheap non-stick(?) steel and rusted the first time I had it in a sink of soapy water, and the other one is a good quality aluminum, nonstick, and has been fine. I wanted the Fat Daddy because of the push up bottom vs a latch, as a latch could presumably bump into the sides of the pan it's going into. The only drawback (?) to the removable bottom Fat Daddio is that IF you use a crust that goes up the sides, pushing up the bottom could or would mess up the sides, vs undoing a spring latch. It is sturdy, won't rust, and only a tiny bit smaller than the one I preferred, so I think I'm happy with it. It'll be Easier to clean without a latch.

Best Cheesecake pans hands down!
I own multiple Fat Daddio's pans with the removable bottoms and they are the only ones I will use now for my cheesecakes. I donated all of my springform pans. If you love to make cheesecake these are the pans for you. Quality pans, easy to remove and transfer the cheesecake!

Éstos en particular funcionan perfecto para hacer cheesecakes y que los puedas hacer lo más altos posible, a diferencia de los que se desmoldan por el aro, que por como está diseñado en la base, te quita un poco de altura y en lo personal, no me gustan los cheesecakes bajitos. Hay que estar al pendiente de los precios porque de repente están muy caros, pero cuando los encuentras en precio, vale totalmente la pena.
