Q: What is the purpose of the cutout between edge and handle? Finger choil? It’s not very ergonomic.

Going from the knife to the handle the first section after the sharpened edge is called the Ricasso which allows for the entire edge to be sharpened, the next cut out space is both a finger and a lateral tie down for attaching a knife to a handle to create distance (spear).

well in this case both are cheap in there own way but cold steel is better product overall my belief.

Almost along the entire length of the blade (the metal directly above sharp part, of course) has a width of 3 mm, the length is 14 1/2 cm, or a little under 7 inches. The sharpness will vary on it's in-package condition, how much you use it, and if, and how well, you sharpen it.
