I'm Thai, I think this one is close to NamTok noodles taste, without other seasoning added. However, there are some herbs you can put more to make it quite aromatic&tasty, beef bones will do, too.

It’s not my favorite taste
The soup base is very salty, you need to add seasoning to make it better, I added chili vinegar on it and it must better taste.I cooked beef shanks and brisket for 3-4 hrs, the add sliced of beef, meatballs, veggies and crispy pork in my noodles bowl.
