I find it very interesting the topics that attack in the book, the language used for the explanations is very informal, not so technical and easy to follow. The topics are very general and it covers a great amount of cooking topics, however it doesn't go in dept. It gives some curious experiments but it does not contain many recipes where to apply the knowledge

Chemistry on the book is a bit boring, but fortunately the next time it happened in my kitchen I started to appreciate it. I like how it explains the effect of each part of a recipe. It's a fun read, and the flexibility it taught to adapt recipes is invaluable.

Es el tipo de libros que resulta una delicia leer porque esta lleno de información interesante y tiene fotos muy buenas también. Claramente lo recomiendo.

Per chi ama capire cosa succede in cucina questo libro esplora in 14 capitoli la chimica e la fisica di :schiume,emulsioni, colloidi gel e sospensioni, oli e grassi ,proteine etc. in modo semplice e accurato.Interessanti i capitoli che suggeriscono come riscalare ricette e spiegano cosa avviene durante il riscaldamento.Un libro che parla di chimica di tutti i giorni a chi non ha paura di impegnarsi un po' a vedere le cose da un punto di vista scientifico.Notevole e divertente la ricetta di un tacchino del ringraziamento di 16 kg cotto a bassa temperatura per 36 ore previa sterilizzazione in acqua ossigenata.Pur amando sperimentare non ho avuto il coraggio di cimentarmi nell'impresa! Ormai il 27 novembre è troppo vicino, ma il prossimo anno chi sa?Credo che una buona traduzione in italiano aiuterebbe non poco la diffusione.Ne consiglio vivamente la lettura, chi vuole farsi un'idea dello stile dell'autore può sbirciare nel sito web dell'autore ( kitchenscience.sci-toys.com )
