Good price for "cooking anchovies"
For salt cured anchovies in extra virgin olive oil, this is a good price. First, "extra virgin olive oil (EVO)" is much more beneficial to your health than "olive oil" and "pure olive oil." EVO costs more to produce, which accounts for much of the higher price. Compared to anchovies in EVO that I've tasted from Rizzoli and Rustichella D' Abruzzo, these Scalia anchovies are a bit saltier and more "spiny." For my taste, I can eat the Rizzoli and Rustichella D' Abruzzo anchovies right out of the container or on some crispy-crusted French or Italian bread. On the other hand, the Scalias are great as a cooking ingredient, adding salt flavor but with a lot more depth and richness. When cooked, as in a marinara, the spiny bones dissolve along with the anchovy meat.
