Replacing the Wusthof with the Shun
Love these knives! I started replacing my Wusthof with the Shun. These are beautiful, well crafted blades.It is tough call which will become favorite as the 7 inch cook’s knife makes work effortless but the 6.5 inch knife is serrated at the front and back enabling a smooth cut on vegetables such as tomatoes. The German blades just were not keeping an edge and in all fairness I have had them for 15 years or so with regular sharpening. Maybe it was time for a change.
