Good one but not for eggs at all
Pan looks good handle well but worst with frying eggs. Don’t try. It would stick at the endSo use it for anything else

Great cookware; but has an issue
Hestan cookware are a real treat to cook with; very comfotable. But if you have a glassn cooktop the "Brand" name on the bottom of the pan is sligthly raised and can scratch a glass cooktop.. I love the pans so I decided to polish [sand] the raised area very easy. Hestan can easily fix the issue; I hope they do!Note: the titainium non stick does not appear to have this issue

Not what I thought
I thought for paying so much money that it would perform as such, but I was wrong...I know it's non stick but thought the pan would not stick asthus bad..I saw other reviews saying this was the best but trust me it's not...The pan will yellow when you first use it and good luck trying to get rid of it...Heat distribution is good but that's all I can say about it...It's not easy to clean but quality seems like it will last a long time since it's steel...I though this was going to be the pan forever since I wanted to get away from non stick pans but I guess I have to look around for another steel pan...If you want a pan that will last forever and not worry about chemicals like teflon and ok with stickiness and more cleaning than usual, then this is for you....

This is my first stainless steel pan and I love it. Wish it was bigger. Thought 8 inches was bigger.

Even cooking!
I love the even cooking. It is now my favorite and I am going to get the larger size. You get what you pay for with cookware, so if you can only get one fry pan, get this one and understand how to cook with stainless so you don't ruin it.

Pricey, but the heat retention and performance are great
This is the smallest stainless steel pan I have at 8.5 inches, but at $140 at present, it's by far the most expensive (my other two are 10 inches, Amazon brand, around $30, and 12 inches, Misen, around $75). While the quality and performance generally justify a higher price, there are definitely some things to keep in mind, both positive and negative.1. It retains heat incredibly well. It's great for searing smaller pieces of meat or caramelizing veggies.2. If you use it right, it has a very good level of non-stick. If it's preheated and oiled, it's as non-stick as just about whatever non-stick pan you may use or a well-seasoned cast iron skillet. I've made small omelets, eggs, pancakes, etc. in this, and I have no trouble with sticking (but I stress, that's only if you pre-heat it well and oil it).3. It has discolored considerably. The manufacturers provide some guidance for keeping it looking pristine, but actually, this one has discolored more than other stainless pans I have in a shorter amount of time. I've taken the same care of it as I have my other stainless pans. I suspect it might be from lots of high-heat cooking, but I'm not sure. I don't really care that it doesn't look pristine, because the performance is good. If you care about whether it'll retain its appearance, this may not be the best one for you.4. It's really pricey. Plain and simple. You can get great quality stainless cookware for less. This is a great pan, but I can't quite justify the price.Overall, I really like this. It performs well and I use it at least several times a week if not more. So in that way, if money is no issue, I can recommend it. If you're budget minded like most consumers, I would say that you can find something else very good for a lot less.***I write reviews as a hobby because I love trying out electronics, clothing, household products, kitchen devices, and more. The best frying pan you can buy.
Hestan cookware is exquisitely designed and crafted. There are a number of small features which you may not initially notice, at least not from looking at it. The most noticeable for us when we cook with it is the uniform heat distribution and retention, which means you do not have to move things around in the pan to get even browning. The curved shape of the sides gives you more cooking area, and the handles stay cool.It is beautifully finished in a combination of brushed and high shine stainless. The rim is curved under so that you can pour from the pan without drips. The flat rivets mean that you can stir without a snag and that they clean up really nicely, without trapping bits of food. It has a very high heat tolerance and can be used on a gas, electric or induction cooktop. I personally love my induction burner and intent to replace my cooktop with an induction burner because it is so fast and efficient, gives you such fine control. Because of the excellent heat distribution, the Hestan pan is ideal for induction cooking. It also works very well on our glass/ electric cooktop, and I expect the performance would be just about as good on any burner, as it was designed to do a lot of the work.Just a short time ago I did not know Hestan cookware. My daughter is a chef who has worked at a number of high end restaurants, most recently at Hawaii;s top restaurant (until the shut down). She has been helping me upgrade my kitchen. When she saw these she told me that if I was looking to upgrade I could not do any better, that the executive chef at the restaurant she works for has done his new restaurant completely in Hestan. Knowing his name and experience, it is a very solid recommendation. Even though I am nowhere near that level as a cook, I can appreciate how well it distribute heat, how well it cleans up, and how attractive it is. I don't have to think about whether it will work on one or another surface if I need to move, to make room on the stove for more dishes. I do not even need to worry about durability because it comes with a lifetime warranty. (That tells you something about the confidence they have in their products). As my daughter said, some of the chefs she has worked with can use any cookware they want, and choose Hestan for their restaurants. For me, that is a very solid recommendation. I know that they know a good deal more than I, and I continue to notice the benefits as I use it.
