Yacon is actually a vegetable that's native to the Andes Mountains (South America). It's been safely used for many generations. In fact, the Ancient Incas were known to use it because of the valuable nutrition it provides and the fact it's high in fiber, helping you feel fuller for longer periods of time.Because it's so low on the glycemic index, it's not easily broke down into sugar in your body. That means you don't get a spike in blood sugar that leads to insulin spikes and weight gain. Yacón syrup is a sweetening agent extracted from the tuberous roots of the yacón plant (Smallanthus sonchifolius) indigenous to the Andes mountains. The syrup contains up to 50% of fructooligosaccharides (FOS). The consumption of FOS does not increase blood glucose; however, the root consists of primarily free fructose at about 35%. The normal flora of the intestinal tract includes both "good" and "bad" bacteria. The beneficial bacteria are called Probiotics; they cohabit in the colon together with detrimental bacteria. FOS are important Prebiotics and act as a food supply for the Probiotics. As such, the high FOS content of the yacon root syrup stimulates an increase in the population of Probiotics and improves our intestinal microflora, which in turn promotes optimal gastro-intestinal function.
