Spicy Moonshiner Breakfast Sausage Seasoning (Makes 5 Pounds)

First off let me say that I'm an avid deer hunter, and process all of my venison at home, this is the best breakfast sausage mix I've found, they gave me a free sample of garlic seasoning as well

Way too much red pepper. And I like a lot of pepper! Can’t taste the sage as the pepper screams all the other spices out of your mouth

I first tried to make this with 3 pounds of ground turkey and, following the instructions, tried to weigh out 3/5ths of the package, but the resulting sausage was too salty, so I thought I the spices had not stayed thoroughly mixed as I divided them, so I bought two more pounds of ground turkey and mixed the whole package with the recommended amount of meat and although my husband and I both really like the spices and basic flavor, we still found it too salty. I made the rest into patties and have frozen them for later use. They will be fine to have one or two at a time or to mix in with other things occasionally, but I was hoping for a bulk way to make my own turkey sausage to be able to eat most days for breakfast. This won't work for that.

This is a great mix for small batches. Good flavor and spice. They also included a nice handwritten note and a sample of their regular breakfast sausage mix which was also great.
