mild ish, good all purpose yeast
you can of course let it have more fermenting time to get more bite, but in my opinion the France strain is one of the milder sourdoughs. makes a good baguette, can be used for people who do not prefer the acidic bite of the more flavorful sourdough strains.my husband- who dislikes sourdough breads- considered this one acceptable as long as it didnt ferment extensively

Amazing: Light, Fluffy bread passes the picky eater test with flying colors!
We have been trying several different sourdough flavors of late; this French (from just outside of Paris!) is a beloved favorite the whole family loves! This is quite a feat, as with six of us, favorites are rarely unanimous! Crumb is open, making bread light and fluffy, with a pleasant, mild sour flavor. We have enjoyed it in many different kinds of bread variations, including a regular French bread, an "Everything" loaf, and a maple cinnamon loaf--all delicious! Even my youngest, an "opinionated" eater who announced she didn't like sourdough, has sanctioned this bread as a yummy bread worth her time.If you like a crust that is not as hard as typical thick-crusted artisian breads, try cooking this sourdough in the small Romertopf #99109 with its lid on. The perfect size for a bread loaf, this wonderful, mostly-unglazed clay pot with lid keeps the steam in while the bread cooks, creating a soft loaf with a light, crispy crust that won't hurt your teeth when you bite into it! This clay pot makes the bread much tastier than a loaf cooked in a regular bread pan with no lid, and even works much better than the fancy French-made lidded clay bread pan that I bought, and at only a third of the price of the fancy French pan, to boot! Well worth it, and also available here on Amazon.If you are looking for another wonderful sourdough flavor, our close-second favorite is the Alaskan sourdough offered here on Amazon which comes straight from the Arctic circle itself with a postcard to match. It is slightly more sour than the French, has a clean, intriguing full flavor, and makes the world's most amazing pancakes that are reminiscent of funnel cakes!

I got this a bit ago and started it the same day as another starter--and mixed up directions. Because of that, it got off to a slow start, but it took off a day or two later than the other, smells great, and I will be trying it this coming weekend--over 4th of July. It smells great, bubbles a lot, and did I mention it smells great? I'm not sure of the flavor yet since having to work interferes with living....I'm impressed that the vendor has 17 starters from around the world and know it will take a while to try them all, so would appreciate your input/suggestions.

I followed directions and got a little coaching and the sour dough bread results are great!

Great culture, with easy instructions
This is my first adventure making a sourdough starter and then the bread. I have to say that the starter was easy to activate. Instructions were simple. The bread I made using the starter was great. It had good texture, a nice hard crust, even holes throughout a slice. This culture is definitely worth it.

I bought this for my fiance. He used to bake bread for a fine dining restaurant in a different state and we couldn't find anyone with a bit of starter for us. We had a lot of trepidation about an unknown one but I am happy to report that we love this starter. The bread has a lot of flavor and a great crust.Definitely would buy again!
