Also known as being the king of rices, grown mainly in the Piedmont region of Italy. It differs from Arborio for a slightly larger shape and higher content of starch. Amongst Italian rices it has the greatest amount of amylose, a substance that contributes to make the grain compact. For this reason, it boasts special gastronomic attitudes with an excellent balance between good absorption capacity and little starch loss so that there is no danger of overcooking. This makes it an excellent rice variety, particularly appreciated by great chefs for the ability of its grains to stay hard at the core and to stay perfect and well separated. Nettles are a common Eurasian weed that has now spread throughout the Northern Hemisphere. The harvest and washing of nettles requires protective gloves due to their stinging hairs, which release irritating chemicals when they come in contact with skin. Nettles are frequently made into soup, stewed, and mixed with cheese to stuff pasta. Cascina Belvedere is one of a very few following the entire process of production, starting it from the seeding in the fields and completing it with the packing of a rich variety of rice products. Our state-of-the-art tools and machineries are a guarantee of quality from the agricultural phase to the industrial one and offer the privilege of obtaining a product directly from the farm. Cascina Belvedere also takes great care of the environment. They use solar panels, energy saving heat ÃŒÃ"Ã¥Ârecycling driers, their products are pesticide and preservative free and attention is paid to the repopulation of the local fauna.
