Great for bread baking- pure Diastatic Malt w/o fillers
I wanted to get some diastatic malt to use for bread baking, both as a dough conditioner and also to super-feed my sourdough starter. Looking online I found that many (not all) products sold as diastatic malt are not pure diastatic malt, but a mixture of diastatic malt plus dextrose (a sugar) and regular flour. This product is 100% diastatic malt. It is used in the making of Korean rice punch (Sikhye) for the same reason that bakers use it in bread baking. It contains enzymes that break down starch (either starch of flour or starch in rice) into a simple sugar called maltose. Maltose is a perfect food for yeast. They consume it and produce CO2 which makes dough rise. When you feed sourdough starter with flour plus a pinch of diastatic malt, the flour gets broken down into maltose which is easily digested by the yeast. When you use it in preparing dough, the same thing happens and it helps to dough rise better and improves the “hole” structure of the crumb as the bread bakes. I have used this diastatic malt for dough conditioning and for feeding sourdough starter, and it is really top notch for both. I have not yet tried to make Korean rice punch! Diastatic malt keeps best in the FREEZER. It will last a long time, like 2+ years or longer. You don’t need much, like about 1 level TSP per 2 cups APF, mixed well before adding the liquids.

Would buy it again!!
Only 1/4 -1/2 1 tsp per 3 cups of flour is needed to make bagels soft on the inside and crispy on the outside with beautiful even color. In addition, it makes the sourdough rise so much faster and better!! Highly recommend! Flour is Made in USA!!!

Great product. Add incorporate 10% into your bread dough and you will love the difference it makes. Found same product at Asian grocery store at 1/5 the price.

Makes delicious Sikhye!
I was recommended this product from a YouTuber who was teaching their viewers how to make Sikhye, a Korean Rice Malt dessert drink. It turned out very well! One batch of 3 liters of Sikhye only used under a fourth of this bag, it is a good deal.

Great Addition to Homemade Bread
This is a great way to add some great flavor and nice texture to your homemade bread. You only need to use a small amount so this package is also a really good value.

Off bitter flavor. Very floury as if plain flour was added to the malted flour.
