Q: According to 5.11's website the hood can be rolled up into the collar, but I don't see how. What am I missing?

The hood is actually detachable and the connection point is a hidden zipper under the collar. You can either roll the hood under the collar completely or detach it from the jacket.

Q: Is this jacket quiet when moving (I'm interested in using it for hunting)?

Fairly quiet for daily use in urban or suburban areas. Has a very slight rustle when moving that's very easy to ignore. However, to a deer or other animal it would likely stand out.

Q: Is this jacket good for winter weather?

I wear it year round in Vancouver, where the weather is much more mild. It's not lined but I guess you could wear a layer underneath if need be. I get a ton of compliments on the jacket whenever I wear it, I recommend it. Hope that helps a little.
