Very good tasting.

These were fatty and I was very disappointed

Ribs had too much gristle. Cooked like I do other ribs. Still tough.

They are thin, not very juicy and are hard to cook to tender. I've cooked 10 of these racks for reference. The flavor is great though. Very porky.

Noticeable more tender and cleaner (no silver skin on meat end of slab) than regular pork. Meat is more marbled but less fatty than regular pork. The slab had a beautiful appearance with a long, symmetrical shape.
