Gluten Free Mama Knows What She's Doing!
I am so excited about this product. I've tried so many different recipes and pre-made gluten-free products and flour blends and have not found the one that makes me dance around the kitchen with happiness until this one! The 1st thing I did was make pancakes with my favorite homemade pancake recipe. Success!! They came out tender and and perfect, the kids gobbled them up in ecstasy, and no one felt sick after eating them the way we feel when we eat pancakes made with regular flour. I made them thin, like Swedish pancakes, and they were perfection on a plate. Then I tried my biscuit recipe--I'm known for my delicious biscuits, so we were all nervously awaiting the results--would these be as good as my famous blow-your-mind, melt-in-your-mouth, slide-right-off-your-chair delicious biscuits we're all accustomed to? Guess what! They were great! (Using real butter is required for maximum greatness, don't try to cut calories here and then moan about the biscuits not being great!) They were crispy on the outside, tender and soft on the inside, just the way a biscuit should be. Using a tsp of xanthan gum in the recipe helps them rise the way they should and helps add to the soft texture biscuits should have, so if you want phenomenal baked goods, don't skip the xanthan. If just plain "really good" is ok with you, then skip the xanthan and you'll still be happy most of the time. We couldn't be happier with this product--well, we COULD be happier if it was a bit less expensive.....but it's a great value for a great product and we have signed up for automatic orders. TO THOSE COMPLAINING about this product because "boo hoo, it's not pure almond flour and I thought is was" or "boo hoo it's not low carb"---it doesn't claim to be either one of these, so.....read the bag and realize it IS almond flour blended with other starchy flours (rice & potato mostly), it's not a weightloss product, it's not pure almond flour. Just appreciate it for what it is--a great, soft, fluffy, tasty, gluten-free flour blend and have fun in the kitchen again!

Lovely...just wish it was a little healthier.
I really loves the things that I've made with this flour (the pull-apart dinner rolls, chocolate chip cookies and bread). The dinner rolls had the density of a biscuit but the look of a roll. They were really fantastic for Thanksgiving, AND they heat up well. I think if you are cooking for celiac kids (or someone has just gone gluten free) then this mix is a MUST have.Edited 12.21.10 After almost a month of using this flour I have to admit it's my go to flour. If a recipe calls for 3 cups of flour I only use 2 1/2 and add 1/2 a cup of teff flour for a little more nutrition. I love that I don't have a million canisters of every type of flour known to man sitting in my cupboard/fridge and that I've had nothing but sucess with everything I've made using this flour blend. Another perk it's cheaper than another amazing bread mix I was using and doesn't have sorghum flour or lots of sugar added! I'm almost embarassed to add that I went through BOTH smaller bags in record time so I just ordered 4 of the 4lb bags!

Best GF Flour
My husband was diagnosed with Celiac Disease almost 13 years ago. At the time, I was always disappointed in the gf products I tried. I made it my mission to be able to make everything I always have made, only in a gf version that tasted just as good. I'm really quite picky, and wanted good food. I also refused to do double the work, spend twice as much, and create something that was not up to my expectations. I couldn't bring myself to make yummy food for me and leave my husband with the gross gf version. At that time, the cost of gf foods was crazy, and what you could find was mediocre at best. Then I discovered Gluten Free Mama. My Celiac friend heard about it, so we decided to split an order. When I tried making chocolate chip cookies the first time, or banana bread, or carrot cake, we were ecstatic with the results! I then discovered that I could buy it in Montana when I'd visit my parents. Not long after, my local grocery store started carrying it. Once I discovered I could buy it on Amazon, that is how I've purchased it ever since. Just remember to add some xanthan gum to your baked goods, and you won't be disappointed. ๐

The best GF flour that has no bitterness like chickpea flour so it is fantastic for pancakes and cakes. My daughter had gluten allergies (egg and diary too) since birth and I have been using this for 5 years now and she has not missed out on any deserts, muffins etc because I have used this, I try so many options out there but somehow this stands stronger with the other ingredients. I do have to use egg replacers and almond milk because of her allergies and i have found this flour holds up very well without use of eggs and milk. I used to buy this at grocery stores but cannot find it now- so thank goodness for Amazon! I buy this in bulk packs and keep it in the freezer. This has been such a staple at home I never bothered reviewing it! So for those trying - here is a review after 5 years of use:)
